Deep Fried Potato Roll

I got this recipe from Momofukufor2.com ! very nice and easy for a quick snack to munch! Like how she describes the roll, crisp outside, fluffy soft from the mashed potato and crunch in the green! ;D

Ingredients ( from momofukufor2.com)
6 slices of bread ( any type u like)
1 cup mashed potato ( about 2 medium size potato)
3 french beans, cut into half after blanch
salt and pepper to taste
1 egg yolk
a. Peel the potato, cut into cubes, boil in salted water for 15 minutes, when it's ready, throw in your french beans to blanch a bit, then drain.
b. Mash the potatoes, seasons with pepper ( the potato should have enough taste already since it's boiled with salted water)
c. cut the bread edge, and roll into paper thin or I describe as ham-thin flat!
d. brush the edge with egg yolk, put 1 tablespoon of mashpotato in the centre, drop half french bean , and roll it up.
e. press the 2 ends firm.
f. Heat up the oil in pan, throw in the rolls and turn it occasionally. Do it quick or else it will burn very fast. When it's well golden brown, transfer to a kitchen paper towels. Server when it's hot

Wash the potato and peel it.
Peel the skin and cut into cubes for boiling

After boiled, mash it with fork.
I like the colour of yolk!
Roll it flat
see, roll it as thin as the ham!
Brush the yolk around the edge. I use fingertips to brush(smear)

Chicken and mushroom croquette


waa .. I feel so Happy I m back to blogging! I wake up at 8am this morning, quickly fried these croquettes, when I m finished, both my sisters came down already. They ate, They liked. ;) one of them said it tastes like nugget. ha ha

Ingredients
Butter 5 Tbsp
Plain flour 5 Tbsp
salt & pepper to taste
milk - 1 cup
Boiled chicken breast - 500g, diced
canned button mushroom - 1 can or less, halved
Dry breadcrumbs ( I used panko)
egg - 1, beaten.

Method
1. Boiled the chicken breast in pot of salted water about 20 mins. When its done, drop in the mushroom to blanch a bit. When the chicken is cool, cut into cubes.
2. Melt butter in a pan, stir in flour, salt and pepper, continue to stir and add in milk. Cook, stir over low heat until the mixture is smooth and Thick!. Off Fire. Mix in Chicken and Mushrooms.
3. Spread the mixture on a pan, cover and fridge for 2 hours or more. I put overnite, so it will be firm enough to cut round.
4. Use a round biscuit cutter, cut out the patties.
5. Coat the patties with eggs, then coat with breadcrumbs.
6. Heat up the oil, and fry the croquettes until golden brown. Serve immediately. Eat with Cuke! I mean cucumber, so it cool down ur body as well! ha ha ;)




Firm mixture before cut into round shapes. I prepare this 1 night before i cook. U dont have to do this, u can let it fridge for 2-3 hours. This is really firm, so is really easy to handle when you cut into round shape.

Mango Mille Crepe


A Mille Crepe, A Thousand Thanks to dad for being so kind, so much considerations given, so everything to us~ ! Here's a mini 8 layer crepe ! ha ha, as opposed to a thousand layer ! mille means 'thousand' in french.


mum bought some apple mango from gaya street. 6 of them cost about RM 5. Being a bit 'high-spirit' today, I made some crepe, by sort of "play cheat" here. make 1 large sheet, cut into few pieces with cookie cutter, then spread with cream and mango, frozen it. Drizzle with some chocolate sauce & walnut. The crepe skin quite thick here, need more practice.

Crepe Ingredients
1/2 cup flour
1 egg
1/2 cup milk + 2 T milk
pinch of salt
1 T butter

Fillings
whipped cream
fresh mango

1. mix all the crepe ingredients together, make sure no lumps in the batter. I sieve the batter after mix.
2. heat up a pan, drop some butter / oil, pour the batter, make the crepe as thin as possible. ( really, need lots of practice + patience)
3. stack up the crepe, let cool.
4. Spread the crepe with some cream in middle, some mango on top, and repeat the same.
( I slice the mango with peeler, which helps a lot!)
5. make some chocolate sauce. I melt 2 T of chocolate chips in microwave, then mix 3-5 T of cream to dilute it, adjust it to your likings.

Rolled Tuille cookie

Tuille , pronounced as "Twill" , not TULIP .
I should name it as "shape your own" cookie.
When it's just baked, shape or curl it as you want. Once you know the trick, we can even make it into basket shape, and serve it with scoops & scoops of ice-creams, top with Cherry. How's that?
Today I shaped my Tuille into cone shape, pipe some Dairy Whipping Cream. (Yes, Dairy Cream). Thanks to L telling me the differences between Non-Dairy & Dairy cream. I was eating fake cream all the time. my system probably clotted by Non-Dairy over 28 yrs! Not today, I will start eating Dairy cream. Today I Chilled my cream + bowl + beaters before I beat the cream. It turned out well ! (not watery, no more sag!) and the texture are just so pure , so creamy.


[Ingredients]
2 Egg Whites
1/4 cup Sugar (Edited! Original yield for 1/2 cup!)
1/3 cup All-purpose flour
1/2 tsp Vanilla extract
50g melted unsalted butter
1/4 cup chopped almond (Edited! Original says Sliced almond)

a. Preheat the oven to 180C
b. Line the baking pan with waxed parchment paper (This is very important. mine was low quality baking paper, and I'm having hard time to pull the cookie off from the paper! so must use waxed paper or nonstick paper!)
c. Whisk the egg whites & sugar, then add the flour, vanilla extract and cooled melted butter. Whisk until smooth. Place 1 Table of the mixture onto the baking pan. Spread the mixture (Make sure it's paper-thin, so that the cookie will be crisp & Crunch.) to 10cm circles, sprinkle with some almonds. Bake until golden around the edges about 6 minutes.
d. While still hot, remove the cookie from pan, and place over the rolling pin to curl.( Do it quick!) If you find the cookies start to get 'harden' before you able to shape them, pop them back into the oven for about a minute to reheat and rework.

Sopaipillas , Cuisine of Chile


Crispy & Puffy ! Taste like Churros! Both are originated from Chile, a fried pastry , and a type of sweet bread too! It tastes like doughnut too. (speak of doughnut, today I m supposed to use this Taiwanese Lady's recipe, and it didnt work, I trashed her recipe to the bin already! See, this is the problem with bloggers, some R honest, some R just... sigh..)

my honey is arriving today. :D And this Heinz honey has its own story too!

ok back to my sopaipillas - it means, fried dough sweetened with honey.
Sopaipillas usually eat with cinnamon sugar/powered sugar/honey.

Ingredients
13/4 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons shortening
2/3 cup milk or water

Combing the dry ingrediens , cut in shortening until crumbly. Gradually add water, toss with a fork until mixture holds together. On a lightly floured surface, knead dough for 1-2 minures or until smooth ( U can add 1-2 Tablespoons of flour if too solf). Cover and let stand for 5 minutes. Roll out 1/4 inch thickness, cut with a cookie cutter. Then Fry them for 1-2 minutes or until golden brown and puffed.
Drain on paper towels. Sprinkle with powdered sugar / honey and serve immediately.


This little puff so cute! like a fried scone! :D

Baked Rösti


Rösti , or pronouns as "ROOSH-tee" , means "Crisp and Golden"
Rösti is a national dish for Swiss people. Normally served as a breakfast dish, like Hash Brown. Ya Rosti tastes like Hashbrown. Both have a similar cooking idea. Hashbrown - potato being shredded/diced , then pan fried.
Rosti - use Raw / Boiled potato, grated and mixed with some butter, then shaped in the frying pan and pan fried... or... a healthy version, Baked it in an oven !
Did a little research, Rosti either eat as a Breakfast with sausage / eggs .. it can be served as a side-dish, like ur mashed potatoes.

Ingredients (serves 2)
1 small onion
250 grams potatoes
1 T melted butter
salt & pepper to taste ( or any seasoning/herbs u like)

a. Preheat oven to 190~200. Peel the potatoes. Bring them to boil for 15 minutes with salt water. Cool the potatoes after boiled.
b. Grate the onion and potatoes together , mix well with melted butter and seasoning (minus the salt)

c. Grease the muffin tin with butter. Carefully fill in with potato mixture and press it gently down.
d. Bake for 30 mins of until golden brown. Gently with the help of a palette knife, loosen the rosti around the edges and take it out. Serve warm



It should taste crispy outside yet soft & tender inside.


If u like pan-fried / deep-fried potatoes, Hash Brown , Rosti , Croquette , Tater Tots ... should be ur favourite. ! ok creamy, I think couch potato more suitable for u ;p

Croquette : French food , is a parcel of food such as minced meat or vegetables, encased in breadcrumbs and sometimes mashed potatoes. , formed into a cylinder and then deep fired. Check out my Salmon Croquettes.

Tater Tots:a side-dish made from deep fried grated potatpes. Cylindrical shape and small size.
In Australia, they are known as “potato gems” or “ potato pom=poms”. Yah, a snack we can always get from college / uni canteen . A$1 = 1 cup. A food that I quite
hate in the canteen during uni time! Roar!!!!

Fusion Burgers



I always think that Chinese + Western can make good friends! Don't u think so ?

"East meets West" Burgers. Chicken patties with ginger roots & coriander. Original recipe calls for ginger roots & radish greens.

Ingredients (Serve 1-2 persons)

120g boneless chicken (minced it)

1 t grated ginger

1 small bunch chopped coriander ( adjust to ur liking. I put MORE, as I love coriander)

1/2 cup breadcrumb ( I toasted 1 slice bread until very crispy, and break into pieces)

1 t oyster sauce

1 t light soya

salt & pepper



1. Mix all ingredients, marinate for 20 minutes

2. Make round patties and coated with some corn flour

3. Heat up pan with some cooking oil. Pan fry the patties for 5-8 minutes or until golden brown.

Bacon Roll




I----I-------m-mm-mm.. BACK.



Thanks to Jo's great idea .



Instead of grill, I pan-fried and simmer my rolls a bit. so there's bit of sauce for my baby rolls! A good recipe for cocktail party next time !


Ingredients
Bacon
Chicken slices (thin sliced, and salt & pepper very slightly)
Prawn (devine, keep the head for sauce)






1. Pan fried the roll under brown.


2. pour 1 cup of water, and simmer the rolls together with the prawn heads.


3. simmer for 5 minutes, so it's thoroughly cooked.


4. Serve well.

Verdict: I made 2 versions.
A : bacon + chicken + prawn
B: bacon + chicken

Apparently I found that the rolls with prawn are more juicy & springy. Roll B bit dried.
Anyways, is the bacon flavour + prawns that make it tastes good.

Ha! both of us made the same food today !! Hers look very good! she follows exact like Jo's one.
so...yeah, she grilled for 15 minutes. She said was the Onion & the chillies that enhance the taste! She loves that!

Cheesy Prawn Roll

Kill me Please!!!! ( like creamy says) my symptom of craving is getting worse -
I'm eating these at 9pm != p
Yeah I promised creamy to make Dim Sum =p Deep Fried Prawn ball with stuffed Cheese.
BUT, I coulnt resist myself when I see this " Wokking Mum's Cheesey Prawn "
O-rite, I will still make the Dim sum Fat bird ! on Sunday ok =p

Ingredients
Beancurd skin (soaked & dried)
* the reason to soak the water for a while is to cut down the salty taste! bcuz we have cheese here. * Make sure to dry off the skin with lots of kitchen paper *
Prawns ( as many as u like )
Cheese ( 1 slice for 2 prawns)

Method
1.Unshell & devine the prawns. Leave the Tail with shell for easy holding.
2. Dry the prawn with some kitchen paper.
3. Lay the prawn on the cheese & beancurd skin.
* Note: Wokking mum cooked the prawn on a skewer b4 wrap with it.. but I dont have the time, so Just leave it there uncooked *
4. Wrap 3~4 layers of skin, and cover with corn flour.
5. Deep fried for few minutes, until golden brown.


NAH! hehehehehheh ; P~ I tell u, very sinful ! & yummy !

Let me use the word . Oozing Cheese from the centre ;p that really melts in my mouth ! imagine the cheese with beancurd skin & prawn ? and it's a very good cocktail food to have!


Tips :
(1) Make sure both skin & prawn are really dried-off b4 roll & fry
(2) Now I know why Wokking Mum half-cooked the prawn b4 roll, so that the prawn is dried-up and when u deep fry, no water will come out.

Why the tips are important
Because I just rolled the uncooked prawn with cheese, and after deep-fried, my cheese is a bit watery at the side! hahahahhaha, that's why you see my oozing cheese are erupting like Volcano lava from the beancurd skin =p
anyways, it still tastes great ! Now I know why creamy love prawnball with cheese oredi.

And, I think I need to go Ikea again. Haha
I just love my black plate from Ikea, hey let me shout a bit, it's made in Turkey (the 2nd one) , the first black is made in Romania =p
Oh well, may be there are just equivalent to made in China for European standard~
But anyhow, at least, mine tablesets are not from China o-rite

Anyways, the Shiny surface black plate can only used for nite-time shooting , which wont reflects the sunlight. Look at my Egg-in-Love , I was quite disappointed when I see the pic ! It reflected everything !! and object not being focus ! I was thoroughly upset! by spending so much on that idiot plate & carrying all over by hand! ( hey it's very ma fan u know =p)

Oh well, now I know how to make use of it already~ ; )

Oh ya! This store [ Living concept ] , on the 2nd floor of Warisan Square (same building with Radius/Imperial Hotel)... they're selling IKEA products!!! but, They dont have nice dining sets ! All boring stuffs, which Parkson Can offer better ones

Chicken and Cashew Mini Quiches



This is actually a 4cm x 1.5 cm ( width X height) Quiche.
KAREN & CREAMY cannot la ..cannot..

Quice can also LONGER than that!!!! Imagine!!!! *Lolz*
Chicken & Cashew Mini Quiches
1 Table spoon cooking oil
1 piece chicken breats, cut into 1 cm cubes
2 ripe tomatoes, cube
2 large eggs
1 cup milk
60g plain flour
salt & pepper & garlic powder
1/2 grated cheddar cheese
2 Tablespoons chopped fresh parsley
60g cashews, chopped
* Marinate the chicken with some salt, pepper & garlic powder for 1 hour or overnite *
a. Preheat the oven to 220C, brush the muffin pan with oil
b. Heat the fying pan with some oil, stir in the chicken, until cooked. Dish up & cool
c. Halve & core the tomatoes, discard the seeds & juice, Dice into 1cm cubes
d. Whish the eggs in a large bowl, add the mil and whisk again. Sift in the flour, some salts..mix well ( note: not too much of salts, because the Cheedar cheese gives some salvoury taste )
e. Add in the chicken, cheese, tomatoes, parsley & cashews, stir well.
f. Spoon the batter* into the pan. Bake for 35 ~ 40 minutes until golden & puffy.

I Eat them with Ketchup ...or... U can just pop into ur mouth ~! =p
