Home-cooking Shark Fin Soup

This post is really for my personal notes (my mum's recipe actually) (I hope Blogger won't lost my data here! I still have a fear on it!) Tell me ur tips too alrite .


How you wash and clean the dried processed shark fin (Shredded form) that sell in a packet? (Yeah, u need to soften it before cook)
Mum soak them in a clear water for half an hour. Then bring to boil for 20 minutes together with the water. After that, off the fire, let it remain in the hot pot for half an hour. Then clean it in cold water , ( again, the fins are not soften yet) so repeat the same steps, by soak, boil and clean. Usually mum will repeat them twice. ( so u can tell there's really a lot of tedious job here)
When comes to cleaning, is actually clean the 'meat' away from sticking the fins. So here u goes.

Soup base
The key-ingredients for preparing this SFS is not about the fins, the secret all lies in the soup.
A bowl of superior premium soup is very important.
mum's superior soup ( for this time) is 2 chicken, 1 length of pork belly, few red dates, few dried scallops and dried squid. (She cooked 1 big pot of broth) (if you can notice, the colour of the soup from the below picture is actually quite muddy .. so U can imagine the taste is really "thick" and "strong" , means Slurrp! )

According to mum, when she learned this SFS from sifu, she was taught to prepare the soup, either u cook only pork bones soup , or chicken soup, so the soup base will be clear & nice, like those serve in restaurant. However, mum realised, if only to cook pork bones soup, there's this piggy smell, which spoilt the overall. so it's better to mix with chicken so to enhance the taste.

What you need for the SFS ?
After cleaning the fins & the soup base is ready, prepare some shredded crab meat and chicken meat. (or any other condiments u like, e.g. shredded abalone)
You will also need 2 egg whites , slightly beaten and put aside.

How you thicken the soup?
Last time, we used to use corn-flour , which is a failure!
Then the Promenade Hotel Chef said to use either
Windmill brand Potato Starch or Waterchestnut flour.

We tried Windmill potato starch before, It was okay. Waterchestnut flour, that is good, However, when comes to dissolve the flour, it has lots of lumps! which my mum dislike, so we don't use it anymore.
Mum said the better one is still "Tapioca Starch/flour" . But!!!!! We searched for the flour so-last-minute on Chinese New Year Eve, and I bought the wrong one! I got her "Sago Flour"! She didnt notice it! and our Shark Fin Soup turned out good as well! so, in other words, U can use Sago Flour too! (I google, and found out, sago and tapioca flour can be used interchangeably!)

When we said better one, it means when u stir ur soup it wont dissolve into watery-soup so easily, and of cuz it wont hold the stickyness for long too, Just alright. (Of cuz no one will like gummy paste soup here...)
And, dont be so 'brainy' like me, half way i m eating, I reheat my sharkfinsoup with microwave, and guess what, my soup is hot (like what I wanted), but watery ! LOlz, mum just gimme a kind of look.


Step1
Heat up the soup. (Tips: my mum will measure the soup using bowl. If 5 persons having the soup, she will put 6 bowls of soup in another pot and heat it up. OF cuz this is to your likings. Such a high cholesterol soup , we limit to 1 person 1 bowl! haha)

Step2

Mix in starch-water in the soup. (no pic too! mum too fast in her action)
( I dont have the exact measurement here. mum's theory is, as long as the soup is 'thick' enough, then stop putting starch)
so may be start with 2 T of starch + 5 T of water and mix. (good luck! )

Step 3
Stir in egg-whites.
When u drop in the egg-whites, to make a swirl-pattern .. make sure the soup is burning hot.
On a safe side, use a ladle (with holes) to drop the whites, like the picture. while u drop the whites, move the ladle around the soup surface.


Step 4
Drop the condiments & Shark Fin now. ( or, some ppl prefer to put on the individual soup bowl..up to u)


DONE .

Wedding Trick or Treat?

" Trick or Treat Ang Pao ? " shouted the bridesmaid
I think this is a must game for nowadays wedding couple. The bride's side so-called sisterss will fool the groom's buddies before the groom able to meet his prettiest wife on the wedding day!

We, the bridesmaid, normally would demand for Ang Pao (red packet filled with lots of money, given by the groom)... as a under-table-money kind of treat. so Once we sisters (bridesmaid) received the Ang pao, we will allow the groom to see his princess! (anyways, there'a always a thing called "Gate-Crashed"!!!! like this case.

(OUCH! It's Pain!) - Ha, this is the punishment from not getting the right answer !
Haha, Tun - The Groom , was being thrown with lots of Questions, if you got it wrong, we have to clip his ears and pull from far. It's really painful though.

This is the most hilarious game. The Groomsmen has no choice but to help Tun for this time. Fruits are tide up with string along the men's waist, they have to swing it, and the one knee down has to catch the fruit and bite it!




Tun created a Poem for Christine.

" Christine likes to eat Potato Chips, Because it is cheap.
Tun would like to bring her to Egypt, However it is not cheap"
(This Tun arh! so money-minded! hahahhahah)
Finally, he is allowed to meet the princess...

Blackberries, Banana, Raisin Muffins


I am so kampung, I bought back fresh raspberry and blackberries from Cold Storage, and on the 2nd day, my raspberry all turned mouldy ! ! ! ! ! ! and I only can reach home on 5th! argh! 2 packs of raspberry are just wasted like that! and Ganache you're right! It taste so awful to just eat alone! hahah in another words, very sourish & not tasty.
so I brought back the blackberries, taste like Ribena! haha.
Found this "Banana & Blueberry Muffin" recipe , replaced with blackberries, I dont have pitted dates, just drop some raisins instead. I cut the banana into chunks, instead mashed them.
The muffin turned out okay.
Brought some to sis classmates & relatives.
The classmates came to my sis and asked
" why so many seeds one? "
seeeee ... that's the problem with KK ! non-blackberries supply, not many kids have chance to try them (including myself), that's why I have such comments on my muffin.

Nien Gao (Sticky Cake)


Nien Gao (pronounce as Neighbour N- Calculation) haha! Chinese New Year Cake. A cake if I'm to choose between western sponge cake and this, I would prefer a sponge cake. However, we don't get to eat Nien Gao everyday, unless you make it.
Lately, I constantly remind myself not to overeat! take lots of greens + fruits , take Quality food (plant refers) and control Quantity! ( ha I m reading phytochemical book now! to brainwash myself a bit) Chinese New Year is looming in probably less than a week! (Argh!)
Nien Gao, overloaded with gula melaka (sugar!) , Flour (starch!!) , oil! ok, I just eat 2 slices to kill my graving ......... I swear I just ate 2 slices.... the other 2 goto my sis's belly! haha
Many ways of eating sticky cake, either u steam it, deep fried with egg, sandwich with taro etc etc.
I actually like my sticky cake pat with corn flour (starch again!) and pan fried it without any oil! Just flour the cake, and put on a hot pan, until the edge started to turn brown or bit of burnt .
I like the smokey flavour of my sticky rice, so yummy. When I made this during my uni time, my housemate gave me an impression of " E yucks" . Hey, That's my favourite. This is the chinese new year snacks that my mum always always make for us since we are very young. IF one day they're not around, this is the food that will make me tears off.

Slice the sticky cake thinly , pat with corn flour and ready to pan fried it without oil.

the Yogitree , The Gardens


I was staying at The Gardens Hotel & Residences on the first night of my short trip. It was highly recommended leh my frens! The lobby wasn't that impressive but, is the room and it was claimed the first non-smoking environment hotel in Malaysia ! how nice.

Ha, I was hungry on that afternoon ! I want some greens before I load myself with lots of meat and meat and meat !!

( Argh! I totally can't remember what's the drink already. but I knew the red is "Very Berry" ) drinks are good! very good

We wanted a lemon tart , and it was sold out. The guy highly recommended us his chocolate mousse cake. and guess what, Thanks god I m not staying in kl. haha, U can never get such a good cake in kk, not even , u know. hahahhaha ;p so cotton soft and the mousse are so smooth!

Apple Cake


This is a pretty easy coffee cake for afternoon tea break! (keke) and my granny smiths were in the fridge since 8th Dec 2008 !!! I only used it on 11th Jan 2009 ! and it still crunchy!
The best part of the cake was when it was freshly baked, the upper slightly-crunch-crust! I like when the cake was still hot, and u can see the whipped cream is melting off very soon too.


When I cut a slice for sis , she said it's good, half way eating, I pipe some cream on her cake, and she said " Excellent"!
So you get the clue now. It's best to serve with cream ; )

Also my sis requested to turn this cake slightly sour than sweet . So instead of not only reducing the sugar ( I still think should reduce further, may be to 150g)... I also add-in 1 whole fresh squeeze lemon juice ! and it's nice :)

When you prepare this cake, it's good if you can ready all the ingredients at a side, including sifting the flour, then start to peel the apples quickly ( I mix in the lemon juice to prevent apples from turning brown)

Also! never a good idea to use whisk to stir in the apples ( I know it's never an idea) , but, U know after digging all the apples out from the "whisk"... instead, I used my hands to mix it! haha

Banquet at Jaya Palace, PJ

This is my 2nd best fren's wedding, Congratulations to Christine & Tun Poey! (ARgh! I have 3 mores to attend!) haha
Christine is a cool & beautiful lady not easy to 'mess' with! hahaha! argh, U know what I mean if you know her ;)
Tun Poey ,he is a gentleman full of humour!

Let see what I have eaten at Jaya Palace, PJ. All the food are soo.... yummylicious!! I can't had this from KK at all! why ah? so sad...sigh









This is the cutest Kei Kei!! she is very very very super cute
