Butter Loaf

I am quite sure everyone has their own butter cake recipe in collection, do you?
I am very 'abnormal' for the past 5 days in the office. Been unusually-quiet in the office. Less shouts, Less Tea-breaks in-between (hey I lose 1-inch)!

I am under-behaving in the office! But I just feel so uneasy when You are here!
I have 3 blocks of butter in the fridge. I must finish it soonest possible, otherwise, soon or later, there are some 'fridge smelt' in the butter, which we dont like it.
Yesterday I had lots of sushi at sushi king, then 2 scoops of heavy ice-cream @ vedablue, then dinner at "new york, new york" @ 1 borneo. OK no pictures, but I was really impressed with one of their Giant burger, bigger than my head!!! Can u imagine? please visit that restaurant, lots of interesting menu! (Same row with secret recipe)
so conclusion, I am having a good-sinful weekend! (A good-fattening weekend)
Ingredients
butter 200g
Fine sugar 200g ( I reduced to 150g, which my advise is, dont reduce!, follow exactly)
Salt 1g
Eggs 200g ( roughly 4 medium eggs)
cake flour 280 g
baking powder 4g
milk 80g
(I advise to drop 1tsp of vanilla essence, more fragnant!)
1. Preheat oven to 180C, line the square tin with baking paper.
2. Beat the butter + sugar until fluffy. Add in eggs, and continue to beat
3. Add in flour + baking powder, continue beat
4. Stir in milk
5. pour into 2 medium square tin. ( I am so lazy, I use 1 tin, and I realise the baking hours need to be increased to another 15 minutes)

Hi, if you use egg separation method (beat yolks and whites separately), the cake will be more fluffy.
hey Rei! ; ) Thank you for your tips, I shall try it one day! I love butter seriously, eventhough it is very fattening!
