Lemon Meringue Pie




This early Morning I got this SMS from my Aunt, JaneShiAk, Saying
" Wei, I m home soon, u bake any yummy 2 welcome me?
HAH! In order to surprise her, I decided to make some effort to try out this Meringue Pie. ( But ended up all in my sis & I stomach oredi!!! hahahaha, out of my expectation, it turns out quite well.


Stage 1
Place flour and butter in food processor. Uusing Pulse action, press for 10 seconds or until miture is fine and crumbly. Add egg yolk and almost all the liquid, process for 15 seconds or until mixture comes together. Leave, covered with plastic wrrap in refrigerator for
20 minutes. * Here, I DONT have a food processor ah!!!! so I pinch all the way with my fingers. =p
Stage 2
Roll pastry until large enough to cover base and sides of prepared DIsh. ( BUTTER the dish before)




Stage 3
Preheat Oven to 180 Degrees. Cut a sheet of greaseproof paper large enough to cover pastry-lined pie dish. Spread a layer of dried beans or rice evenly over paper. ( This is to prevent Pops-up in the center during baking). BUT!!! I dont have the above paper! So I replace with some heavy kitchen utensil. Haha! Bake for 10 minutes. Discard paper & Beans. Return to oven for further 10 ~ 15 minutes.

Stage 4
To make filling.
Combine cornflour, water, milk, rind, juicie & sugar in a pan. Stir constantly over medium heath until thicken. Remove from heat. Slowly pour into egg yolk & beat well.

Stage 5
To make Meringue.
Place egg whites into mixing bowl. Using electric beaters, (fast mode). beat egg whites until soft peaks form. Add sugar & cream of tartar gradually. Constantly beat until mixture is thick & glossy.




Stage 6
Spread filling evenly over pastry base. Spread meringue on top. Bake for 15 minutes or until meringue is Golden.
Serve COLD. ( Meaning, Must put into Fridge!!! )
