Braised Chicken with Red Dates

Amy Beh's Braised Chicken with RED DATES .

Half chicken, cut into pieces
2 Large potatoes
1 piece of big ginger
5 cloves of garlic
10-15 red dates (seeded)
500 ml water
3-4 tablespoons sesame oil

salt & pepper
1 Tablespoon sugar
3 Tablespoon light soya sauce
1 Tablespoon Dark soya Sauce
1 tsp chicken stock granules (Optional)

  1. Marinate the chicken with some soya sauce for at least an hour.
  2. Heat sesame oil and fry ginger and garlic till fragrant. Add in chicken pieces and stir fry until aromatic.
  3. Pour in water and stir in seasoning. Add red dates, potatoes and simmer in a Claypot.
  4. Cook for 45 minutes. or until the sauce slightly thick.
