Amy Beh's Braised Chicken with RED DATES .
Half chicken, cut into pieces
2 Large potatoes
1 piece of big ginger
5 cloves of garlic
10-15 red dates (seeded)
500 ml water
3-4 tablespoons sesame oil
salt & pepper
1 Tablespoon sugar
3 Tablespoon light soya sauce
1 Tablespoon Dark soya Sauce
1 tsp chicken stock granules (Optional)
- Marinate the chicken with some soya sauce for at least an hour.
- Heat sesame oil and fry ginger and garlic till fragrant. Add in chicken pieces and stir fry until aromatic.
- Pour in water and stir in seasoning. Add red dates, potatoes and simmer in a Claypot.
- Cook for 45 minutes. or until the sauce slightly thick.
