Monkey Little Cake

Banana cupcake with cream cheese frosting. Oh, I like to do frosting simply using spoon, and spread the top, that's it. After all, it is just for eating ..
Original recipe from here .

I amended the recipe a bit, here it goes.
  • 100gram cake flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 very ripe large bananas, peeled
  • 1/2 cup sour cream OR, I used 1/2 cup yogurt + 1/2 teaspoon baking soda
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup sugar
  • 125 gram butter, room temperature
  • 2 medium eggs, separated.

1. Position rack in center of oven and preheat to 350°F. Whisk flour, baking powder, baking soda, and salt in medium bowl to blend. Mash bananas with fork in another medium bowl until smooth. Mix sour cream and vanilla into bananas.

2. Using electric mixer, beat 1/2 portion of sugar (from the 1/2 cup) and butter in large bowl until light and fluffy, about 3 minutes. Add egg yolks and beat until well blended. Mix in banana sour cream mixture and fold in flour. ( note: do not overmix, just fold until incorporated, dont keep stirring, keep string and overmix will cause ur cupcake very dense and hard)

3. Beat the eggwhite with cream of tartar until foam, slowly add in the remaining sugar until soft peak. Fold into the flour batter,

3. Bake cupcakes until tester inserted into center of each comes out clean, about 20 minutes. Transfer cupcakes to rack and let cool completely.

For frosting

Roast the almond in oven for 5 minutes until fragrant. Take out, let cool, crush it.
(notes: Must roast the almond before mix in the cream cheese. The aroma of the roasted almond was so nice, after blended with cream cheese! trust me)
5. Take out 200g cream cheese, in room temperature , beat with machine until fluffy, slowly add in powdered sugar . ( depends how sweet u like). Then mix in the crushed almond. Spread on each cupcake when it is completed cool and eat.

Terri : hehe , 'nei c yat c mei zhi dou loh...".. for me is okay, can eat. hahah bcuz is egg-separated method, so is definitely soft.
