The marshmallow-like icing is very good! First time I came across with such good silky smooth icing. it is not cream, it is made with egg-white with bain-marie method! it's fluffy cloud icing.
plus, this vanilla butter cupcakes are good!! not dry, soft & buttery type. good for party cupcakes!
for Fluffy Cloud Icing recipe, Please refer to Rachel Knoo's . Follow every single tips & steps! U will get it! The 7-minutes of icing is worth it! The results of this icing will simply impressed u. Recipe calls for a whisk, however I used machine to beat on a thick glass bowl under a pan with simmering water. I'm actually sweating from standing in front of the stove, plus keep an eye from my watch(hp watch) and the eggwhite in front of me! :D that's explained why I sweat-ed!!!

My personal note is, I still find the Fluffy cloud icing bit too sweet, eventhough dear RK already reduced from 175g to 50 g for 1 eggwhite!!! next time, I try to reduce further, and see if the result still yield the same good one! Thanks Rkhoo!!!!! U're my hero now! :D

Oh the icing. It looks gorgeous. I am definitely and icing girl. No matter how good is the cake or cupcake or muffin the icing is always what counts :-)
