Ingredients | Preparation |
- 1 eggplant [approximately 1/4 pound - 113 g]
- Cold water
- Salt
- Boiling water
- 5 tablespoons [75 ml] sesame seeds
- 3 tablespoons [45 ml] soy sauce
- 2 tablespoons [30 ml] sugar
- 1/4 teaspoon [1 ml] m.s.g.
| - Thinly slice eggplant approximately 2 inches [5 cm] long and 1/4 inch [6 mm] wide; dip slices in cold water for 10 minutes.
- Then cook eggplant slices in boiling salted water until tender.
- Drain and lightly press slices to get the water out.
- In a heavy bottom hot frypan, heat sesame seeds until swollen and they just start to burst, but do not roast too much; grind seeds with a pestle or in an electric grinder.
- Add last 3 ingredients [soy sauce, sugar, m.s.g.] and crush all ingredients together.
- Mix well with eggplant slices.
