Crepe Suzette

*************************************************

When I was still young, mum usually make us 'men-fun-Tat' (pancake)for afternoon snack. Mum normally estimate her ingredients by adding flour, egg, water, sugar , mix well, and start making the pancake. She always make us a thick pancake. and I always have to remind her make it 'bok' di.....thin a bit..... which is why my waist is quite thick too! ;D

Today, while I'm making these pancakes.. mum said, hey, make extra for me. I make a good thin pancake for her! and she likes it ~

Ingredients
[batter]
2 eggs
120g flour
1 cup milk
1 T sugar

[sauce]
1 cup orange juice ( I made from fresh)
1 T sugar
1 ~ 2 T brandy / grand marnier ( I used my dad's brandy, which is, er more than 30 yrs never opened!!!! and the liquer smell r just killing me!! soooooo frangant!
slices of oranges

1. Beat egg, sugar in a bowl, mix in flour and make sure it's well mix.
2. Pour in milk and stir well until the batter becomes diluted. ( I use electrical mixer to help). Let it stand for 30 minutes.
3. Heat up the pan, drop some melted butter, pour the batter, use the back of the spoon to smooth the batter surface.
4. Let if cook for 1 minute, then flip over . until both sides are lightly brown.
5. When all the crepes are done....
6. Wash the pan, now prepare the sauce. Pour the orange juice, sugar and simmer a bit. Pour Brandy in... or flambe if u dare! haha
7. Put the crepe in the sauce and simmer for 1 minute, drop some orange flesh, and off fire. Serve.

Warm tangy sweet sauce over thin crepe. yummie!
