Bruschetta with seared scallop


I came across Lorrine's bruschetta with seared scallop, wahh, so expertizing just from the picture itself! so ,quickly copy recipe from her and make one, and results: really easy, no fuss, good and delicious!

Ingredients (2 persons)
1 baguette (french loaf)
some butter for spread
some cherry tomatoes
1 small red onion
1T Balsamic vinegar ( I forgot I dont have this at home! so I substitute with lime juice & liquid aminos)
1 T olive oil
1/2 T fine sugar
salt & pepper to taste
6 big scallop

1. Dice the red onion very very fine, mix in balsamic vinegar, oil and sugar with the halve tomatoes. Put it aside to marinate a bit.
2. Slice the bread, spread some butter, and bake in oven at 170C for 5-7 mins.
3. while baking, heat up the cooking pan with little bit of oil for high heat. Throw in the seasoned scallop and keep tossing, until you see slightly burnt / char.
4. Off fire, put the scallop on each toast, top with tomatoes and drop some sauce on it too. eat!

Char the scallop on hot pan.

Steam Cabbage Prawn with Tung Choi (冬菜)

Tung Choi , the preserved cabbage / green mustard according to Wikipedia. Very tasty , an extra flavour to the whole bowl of soup / noodle If Tung Choi is added. I remembered whenever mum ask me to cook mustard green with egg soup
( 菜汤) , I will put a lot of " Tung Choi" , and mum will always say
" Ah Tng, are we eating 菜 or 冬菜 here?

So yeah I do not have any leftover broth at home! I need to steam these again leftover cabbage in the fridge, I need something ' flavourful' and I only can think of "tung choi", instead of salt!

Ingredients
some chinese cabbage (China's one sweeter")
some prawns
4 clove minced garlic
pinch of salt
2T cooking oil
1 ~ 1/2 cup water ( depends how many cabbage u have)
1 T of Tong Choi

Method
a. Heat up the steamer.
b.Use a deep bowl , so when cooked, there's room for the soup.
c. Cut the back of prawn horizontally, then slice vertical for the top part. Stuff with minced garlic & salt. Cut the cabbage into Half from the center.
d. Arrange the cabbage at the bottom, and prawns on top. Drizzle with oil & put some water . Sprinkle some Tong Choi at the bottom and steam for 15 mins ~ 18 mins.

These cabbage very savory sweet with lots of prawn flavour! and most important...Tung Choi ! slurp! serve with bowl of white rice.

Abalone Rose


Happy Chap Goh Mei !
15 Fifteen days of Chinese New year 2009 ends at today 9th Feb 09. (argh, means back to rabbit food? no more carnivorous ? )
Anyways, I love making food into roses, same to this abalone. Just slice as thin as possible (obviously my knife-skill is bad enuff) and make roses for starter! drizzle with sauce and serve it to your beloved guests ;)

*I used less than half abalone to make a medium rose. so If you can slice thinly, I think 1 abalone can make 4 roses! * and guess what? the best is, no cooking is required! :)

Merry Christmas !


All I want for Christmas is my two front teeth .....( la la la )

my Wisdom tooth! I am having an awful pain with my Wisdom tooth ! It is swallowing + I can't speak probably on the first day ;(

me: Still pain... cannot talk, only can smile SMELL

ARGH! I actually pronounced as SMELL instead of SMILE!!!!! can U imagine I really can't speak probably?

I think, I had too much of heaty & hearty food during the Winter Solstice Day! I had my most-favourite-pan-fried-soya-prawnssss! I had 3 creamy cream fattening donuts ... I had..etc

This is my most yummy prawns from mum ! This is the dish that I always demand her to cook for festive! ;D

Bacon Roll




I----I-------m-mm-mm.. BACK.



Thanks to Jo's great idea .



Instead of grill, I pan-fried and simmer my rolls a bit. so there's bit of sauce for my baby rolls! A good recipe for cocktail party next time !


Ingredients
Bacon
Chicken slices (thin sliced, and salt & pepper very slightly)
Prawn (devine, keep the head for sauce)






1. Pan fried the roll under brown.


2. pour 1 cup of water, and simmer the rolls together with the prawn heads.


3. simmer for 5 minutes, so it's thoroughly cooked.


4. Serve well.

Verdict: I made 2 versions.
A : bacon + chicken + prawn
B: bacon + chicken

Apparently I found that the rolls with prawn are more juicy & springy. Roll B bit dried.
Anyways, is the bacon flavour + prawns that make it tastes good.

Ha! both of us made the same food today !! Hers look very good! she follows exact like Jo's one.
so...yeah, she grilled for 15 minutes. She said was the Onion & the chillies that enhance the taste! She loves that!

Prawn and Pomelo Salad



Don't understand why, my hormone can never sated , not until I had enough Tangy Spicy & Savoury food! I feel like bang myself to the wall !

Prawn and Pomelo Salad (Adopted from HerWorld, Volume 74)
Ingredients:
10 fresh medium prawns
2 cups of pomelo puls
2 tbsp roasted peanuts
1 finely shredded daun kesum (Vietnamese mint or laksa mint)
1 red chilli ( I used bird-eyes chillie! more TANG!)

Dressing:
2 tbsp fish sauce
2 tbsp rice vinegar ( I substitute with Lemon juice)
2 tbs sugar

Method :
  1. Peel and devein prawns. Poach the prawns for 2-3 minutes in a boiling water , set aside.
  2. Combine dressing ingredients in a bowl and mix until the sugar is dissolved
  3. In a large bowl, toss the pomelo with dressing to mix well. Add all the other ingredients and continue tossing until well combined.
  4. Mix well with prawns and serve immediately.
Pick Tiger prawns with Good stripe!

I really like this!! the Chillies & the Lemon sauce & bit of savoury from Fish sauce give good combination . My tongue is begging for more, weird, In fact is the spiciness around my tongue that calls for 'more water'! hahahahha

Prawn Balls Family

I spent 1 hour in the kitchen, from Chopping to Steaming plus washing & Photography session.

I made 4 types of prawn balls + 1 fried rice.

Hahaha, I'm too hungry from Office, so I decided to make some fried rice with my balls ! & eat with my mum~ haha

~ All these are created in conjunction to Chinese New Year celebration !heheh

cantonese: Fatt Choi Ha Yuen
Mandarin: Fatt Chai Prawn balls
English: Sure Win Prawn balls
Hidden meaning : Fatt Choi lah! =p won in Gambling =p

I learnt from mistake! I should have fried this Item 1st, or I should have changed my oil ! tu lah, LAZY ppl like me...hahahaha... ee I Hate, now u see, make my "nest" so dirty~ hahah

Cheesy Prawn Roll

Kill me Please!!!! ( like creamy says) my symptom of craving is getting worse -
I'm eating these at 9pm != p
Yeah I promised creamy to make Dim Sum =p Deep Fried Prawn ball with stuffed Cheese.
BUT, I coulnt resist myself when I see this " Wokking Mum's Cheesey Prawn "
O-rite, I will still make the Dim sum Fat bird ! on Sunday ok =p

Ingredients
Beancurd skin (soaked & dried)
* the reason to soak the water for a while is to cut down the salty taste! bcuz we have cheese here. * Make sure to dry off the skin with lots of kitchen paper *
Prawns ( as many as u like )
Cheese ( 1 slice for 2 prawns)

Method
1.Unshell & devine the prawns. Leave the Tail with shell for easy holding.
2. Dry the prawn with some kitchen paper.
3. Lay the prawn on the cheese & beancurd skin.
* Note: Wokking mum cooked the prawn on a skewer b4 wrap with it.. but I dont have the time, so Just leave it there uncooked *
4. Wrap 3~4 layers of skin, and cover with corn flour.
5. Deep fried for few minutes, until golden brown.


NAH! hehehehehheh ; P~ I tell u, very sinful ! & yummy !

Let me use the word . Oozing Cheese from the centre ;p that really melts in my mouth ! imagine the cheese with beancurd skin & prawn ? and it's a very good cocktail food to have!


Tips :
(1) Make sure both skin & prawn are really dried-off b4 roll & fry
(2) Now I know why Wokking Mum half-cooked the prawn b4 roll, so that the prawn is dried-up and when u deep fry, no water will come out.

Why the tips are important
Because I just rolled the uncooked prawn with cheese, and after deep-fried, my cheese is a bit watery at the side! hahahahhaha, that's why you see my oozing cheese are erupting like Volcano lava from the beancurd skin =p
anyways, it still tastes great ! Now I know why creamy love prawnball with cheese oredi.

And, I think I need to go Ikea again. Haha
I just love my black plate from Ikea, hey let me shout a bit, it's made in Turkey (the 2nd one) , the first black is made in Romania =p
Oh well, may be there are just equivalent to made in China for European standard~
But anyhow, at least, mine tablesets are not from China o-rite

Anyways, the Shiny surface black plate can only used for nite-time shooting , which wont reflects the sunlight. Look at my Egg-in-Love , I was quite disappointed when I see the pic ! It reflected everything !! and object not being focus ! I was thoroughly upset! by spending so much on that idiot plate & carrying all over by hand! ( hey it's very ma fan u know =p)

Oh well, now I know how to make use of it already~ ; )

Oh ya! This store [ Living concept ] , on the 2nd floor of Warisan Square (same building with Radius/Imperial Hotel)... they're selling IKEA products!!! but, They dont have nice dining sets ! All boring stuffs, which Parkson Can offer better ones

Pasta Salmon


I was watching " 30 days of nights "! too scary and I'm TOO hungry too! I stopped half way ! hahahah I decided NOT TO WATCH it for the rest....

I just defrost my salmon, but dunno HOW TO COOK!
Feel like fried rice with Pan fried Salmon, but NO RICE WAH!!! hate it!!!!!!!!!!!!!!!!
so just make some fried pasta in chinese style la =p
and my salmon in "sour plum" sauce!


Pasta
1 Tablesp oil
2 Teaspn light soya
2 soaked mushroom, sliced
1 stalk green onion, chopped
1 shallot, diced

Heat up the wok, add in shallot, mushroom.
Throw in cooked pasta, some soya.
Add in Green onion when it's almost ready

Salmon
Marinate with salt & pepper .
Pan fried.
1 Tablesp thick sour plum sauce + 1 Teasp Ketchup + 1 Tablesp water + 1/2 Teasp cornflour + cut chillies

Prawn Curry



A very easy way of Prawn Curry! and... I'm pretty much sure my F.I.L would Luu..ve this Dish! * Lolz *
And... Thanks to Mrs. Baasje for her great recipe!!!


Ingredients:
8 Prawns (medium ~ large)
1/3 onion, sliced, minced
1 tablespoon curry powder
3 tablespoons coconut milk/powder
200ml water
1 tablespoon tomato puree/ketchup
1 boiled tomato, skinless & chopped
1 stalk coriander leaf, chopped
1 stalk coriander leaf, for deco
1 cut chillies / 2 bird eye chillies (Optional)
Dash of sugar
2 tablespoons cooking oil
Marinate:
4 cloves garlic, minced
1 tablespoons minced fresh ginger
1 teaspoon tamarind paste (Assam Jawa), dillute with 50ml water
Pinch of salt
Methods:
  • Marinate the prawns for 1 hour.
  • Heat up oil, add onion until camerlize.
  • Add in curry powder, fry a while.
  • Then Add in prawns & all ingredients.
  • Bring to boil until prawns are cooked, Dish up the prawns, and left the sauce to simmer until thicken.
  • When the sauce is ready, pour in the prawns again, stir a bit, then Serve with some fresh coriander leaves!


verdict: very YUmmylicious!!!!!!!! Hahahahha....I mean, Mrs. Baasje Has a very GOOD recipe!!!! and ...am sure the idiot out there will love this!!!

Salmon Croquettes

HEhehe... I got this Recipie from "Flavours" The magazine, I kept it for 3 yrs oredi lo... when I m still working for Promenade~ Sigh...FINALLY!!! I have the time to cook this =p~ life in Promenade = Slave . HAhahhahahaha.... =p~ life in Kasi = Princess . * herm...*





Tips:
  1. You may reduce the Cayenne powder by half. I found it a bit spicy la.. but if you are a Hot Palate, it shall be fine!
  2. I highly recommend to add 2 tablespoon of lemon juice. It adds more Tangs! * LOlz *
  3. Roll a small portion of Croquettes are even nicer !! Mine are just too Fat & Greedy! Haha
Methods:
  1. Steam salmon until cooked and mash with a fork.
  2. Cut the potatoes into thick slices and fry them in hot oil unitl golden brown. Dish out and mash.
  3. Add mashed potatoes + Salmon + Ingredients , seasoning to taste.
  4. Form the mixture into little sausage-like rolls.
  5. Dip into beaten egg + roll in breadcrumbs.
  6. Deep fry in hot oil until golden brown.
  7. Serve with Mayonise or Sweet Chilies or just squeeze a bit of lemon would be Good enuff! hhahahhaa....HuRray!!!!!!!!!!!!!!!!! Holiday BEGins... =p~
